Soupe de purée de chou fleur

Soupe de purée de chou-fleur (Cauliflower Puree Soup) is a creamy and comforting soup that highlights the delicate flavor of cauliflower. It’s simple to prepare and can be enjoyed as a light main course or a starter. Here’s a classic recipe for making this delicious soup:

Ingredients:

  • 1 large head of cauliflower, cut into florets
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1 medium potato, peeled and diced (for added creaminess, optional)
  • 1 liter (4 cups) vegetable broth (or chicken broth)
  • 200 ml (3/4 cup) cream (or milk for a lighter version, or coconut milk for a dairy-free version)
  • 2 tbsp olive oil
  • 1 tsp dried thyme or rosemary
  • Salt and pepper to taste
  • Fresh parsley or chives for garnish

Instructions:

  1. Prepare the Cauliflower:

    • Wash and cut the cauliflower into florets. If using, peel and dice the potato.
  2. Sauté the Aromatics:

    • Heat the olive oil in a large pot over medium heat.
    • Add the chopped onion and sauté until softened and translucent, about 5 minutes.
    • Add the minced garlic and cook for another minute until fragrant.
  3. Cook the Vegetables:

    • Add the cauliflower florets (and diced potato if using) to the pot. Stir to combine.
    • Sprinkle in the dried thyme or rosemary, salt, and pepper.
  4. Add Broth:

    • Pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-25 minutes, or until the cauliflower (and potato) are tender.
  5. Blend the Soup:

    • Use an immersion blender to blend the soup directly in the pot until smooth. Alternatively, you can transfer the soup in batches to a blender, blend until smooth, and return it to the pot.
  6. Finish the Soup:

    • Stir in the cream (or milk or coconut milk). Heat the soup gently but do not boil. Adjust the seasoning with additional salt and pepper if needed.
  7. Serve:

    • Ladle the soup into bowls and garnish with chopped fresh parsley or chives.

Tips:

  • For extra richness, you can add a tablespoon of butter or a splash of white wine to the soup.
  • If you prefer a bit of texture, you can blend only part of the soup and leave some chunks of cauliflower.
  • This soup pairs wonderfully with crusty bread or a light salad.

Enjoy your soupe de purée de chou-fleur! It’s a warm, velvety soup that’s both healthy and satisfying.
